This Week's Eats 2/5/12

As promised last week, here's a peak into what the Thomases will be chowing down this week:

Sunday: Mike's Superbowl Chili Cook-Off Winning Chili (or so he hopes...)
This Sunday we'll be heading over to our pastor's house for a Superbowl party and more importantly, a chili cook-off. Somehow my husband came up with this idea and is determined to win. For him, its like pairing the competitiveness of sports, which he loves,with eating, which he also loves. His recipe is a compilation of various recipes. Monday: Chili leftovers with homemade tortilla chips
Tortilla chips and I are have a serious love affair. Basically anything that can be used to get guacamole or salsa into my belly is a winner in my book. However, conventional chips are often fried and loaded with salt and I want to feel guilt free while stuffing my face full of these babies. A few weeks ago, Mike tried making his own and they turned out great. They were a little thicker than store-brand ones but super crunchy and pretty healthy.

Here's what the DIY version of tortilla chips look like. Via.

DIY Tortilla Chips
Start with a stack of 6" corn tortillas. Using a pizza cutter, cut a stack into triangles. Lay the triangles in a single layer on a baking sheet and brush with a little bit of olive oil (just a smidge) or spritz with canola-oil spray. Sprinkle with a little bit salt and bake for 15 minutes at 350 degrees F. You can also spice them up a bit. Mike did one batch with rosemary salt (mentioned here) and another batch with a bbq spice rub I made him for Christmas. You could also do chili powder, cumin, or classic salt and pepper.

Wednesday: Beef with Broccoli and brown rice (or maybe noodles if we're on rice-over drive)

Thursday: Southwest Chicken Panini and sauteed spinach with garlic and onions
Another one from our gal Annie at Annie's Eats. In case you can't tell, we like Mexican alot.

Friday: Fish in Foil Packets with steamed tomatoes, onions, squash and potatoes
So I know I posted this last week but our plans changed on Friday night and we still have the goods to make this. Gotta use what you have.

Saturday: I guess I don't really plan dinner for Saturday nights. I just kind see what happens....
