No-Bake Energy Balls

In need of a quick pick-me-up? My mother shared this recipe that she got from one of her co-workers for no-bake energy balls. They are a great snack, packed with nutrition and flavor.



Ingredients:

dry
2 cups oats
1/2 cup ground flaxseeds
1/4 cup wheat germ
3/4 cup chocolate chips
1/4 cup chopped walnuts
1/4 cup chopped almonds
1/4 tsp sea salt
1/4 tsp cinnamon

wet
1/3 cup honey
1 tsp vanilla
1 tsp coconut oil (optional)
1 cup of natural peanut butter

Directions:
First mix dry ingredients and wet ingredients separately, then combine all and roll into balls. Spread out on cookie sheet and freeze for 30 minutes. Store in the freezer in a freezer bag.

  1. Made these yesterday =) They are so yummy and my husband loved them too! I ended up adding more than a cup of peanut butter and some of the mix still wouldn't stick. So I put the extra crumbles in a little ziploc and add it to my yogurt or just eat the crumbles alone. Love this recipe I will use it again and again. =)~Kerri Chavez
